Fennel-Apple Slaw

There are lots of ways to use up produce that are nearing the end of their rope. Slaws and salads are one of my favorite ways to combine both. This week I found myself with a couple of fennel bulbs and lots of apples. Here’s a quick fennel slaw I put together with all things found in my fridge, or pantry.

Fennel-Apple Slaw

• 2 fennel bulbs, thinly sliced (save fronds)
• 2 small gala apples, thinly sliced
• 2 celery stalks, thinly sliced on the diagonal
• reserved fronds, chopped
• tarragon (from pantry, though fresh would be 🤌🏻)
• EVOO, around 3 T.
• ACV, around 2 T.
• salt & pepper

Toss all ingredients together in a bowl. Serve straight away, or cover and chill to serve later.
