Idiot-Proof Chocolate Mousse

Courtesy of one of my preservation projects, here is a simple, 5 ingredient, chocolate mousse recipe. This is a great make-ahead dessert for a dinner party, or a sweet finish for a Valentine’s dinner.

You’re no dummy!

To feign culinary genius, serve this in a champagne coupe or a demitasse cup.

Yields: 4 x 1/2 cup servings

Ingredients:

  • 1 (3.9oz) package instant chocolate pudding

  • 1 c. whole milk

  • 1 c. whipped topping (such as cool whip)

  • 1 tsp. instant coffee

  • 1 package raspberries

  • mint leaves, for garnish

Instructions:

  1. Make pudding by package instruction, only using 1 cup of milk. Add instant coffee.

  2. After mixture has chilled in the refrigerator for about 5 minutes, fold in whipped topping.

  3. Transfer mixture to your serving containers, and place back in the fridge until ready to serve.

  4. Remove and top with raspberries, and garnish with a mint sprig before serving.
